Lyofast MO 036 consists of undefined strains of Lactococcus lactis ssp.cremoris. This combination has a good resistance against bacteriophages.
Nevertheless, some strains may carry prophages, and consequently, MO 036 is not recommendable in rotation cycles but is normally used till problems arise and then changed. Lyofast MO 036 ensures a uniform and controlled production of fresh cheese, soft cheese, and semi-hard cheese.
Lyofast MO 036 is not agglutinin sensitive and has slow acidification at low temperatures resulting in low post-acidification.
